The Executive Sous Chef will be responsible for the quality of all fresh prepared foods at Belcampo Meat Co, including sit-down, take out, deli and grab & go. This position will work closely with the Head Chef, Director of Culinary/Facilities, and Lead Line Cooks to achieve Belcampo’ s vision. This position will also be responsible for fostering a great working environment in the kitchen and the shop at large; this includes playing an active role in training and onboarding new Compadres.
Job Duties and Responsibilities
Create and maintain excellent standards for the kitchen and dish-room staff. This may include recruiting new staff members, training current staff members, and implementing staff meetings to communicate and enforce guidelines.
Manage the kitchen’ s internal expediting station by ensuring that employees have proper plating technique and taste.
Coach Lead Line Cooks on how to operate the daily procedures of the Head Chef.
Oversee all kitchen procedures when Head Chef is not present.
Coordinate with the Head Chef and Butcher to ensure maximum product usage and profitability; the Senior Sous Chef will be responsible for ensuring minimal waste
Perform Line Cook duties; the Senior Sous chef is expected to set an example and answer any questions from Compadres when cooking.
Ensure compliance with local health department and other regulations; train all Compadres on how to maintain these standards.
Propose new dishes and specials as needed.

- Computer proficiency, especially with Excel and Word

- 5+ years of culinary experience
- 1+ Sous Chef/Kitchen Manager experience
- High school degree/GED equivalent is preferred
- Manager Food Safety certification is required
- Spanish proficiency preferred
