We are committed to finding and placing the best hospitality talent in the industry!      HSS is currently recruiting for a Sous Chef for a direct position in the San Mateo area.   PAY DOE | Competitive   JOB Description:   Job Identification   Job Title:   Sous Chef Reports To:   Head Chef Supervises:   Line Cooks, Prep Cooks, Dishwashers (helps to supervise) Internal Contacts:   Head Chef, General Manager External Contacts:   Food Purveyors, Human Resources Exemption:   Non-Exempt   Job Purpose Under minimal supervision, the Sous Chef bears secondary— and, in the absence of the Head Chef, primary— responsibility for the quality of all fresh prepared foods at Belcampo Meat Company. The Sous Chef is responsible for planning and directing food preparation in the kitchen, which involves a large degree of supervising other kitchen staff, as well as keeping an eye out for problems that arise in the kitchen. The Sous Chef at times, will be expected to discipline and coach underperforming staff members, as well as provide encouragement and for staff members that go above and beyond their duties.   Job Duties and Responsibilities     1. 20% Maintain and assure highest level of quality for all fresh prepared food products 2. 15% Oversee and accurately execute all menu items during all services 3. 15% Train and coach kitchen staff and take appropriate action to ensure that all staff are performing their duties to expectations. 4. 15% Manage purchasing and inventory in absence of Head Chef   5. 15% Maintain clean, organized and properly functioning kitchen, including equipment upkeep 6. 5% Work with Head Chef to propose new dishes and specials when necessary 7. 5% Coordinate with Head Butcher to ensure maximum product usage and profitability 8. 5% Ensure compliance with local health department and other regulations 9. 5% Assist in general tasks as specified by Head Chef & General Manager   100%     Job Competencies, Qualifications, and Requirements   Knowledge:
    • Comprehensive culinary knowledge, especially meat and understanding food and labor cost

  Minimum Qualifications
    • 3+ years of culinary experience
    • High school degree/GED equivalent is preferred
    • Manager Food Safety Certification is preferred however servesafe is required
    • Spanish proficiency preferred
  Physical Requirements
    • This positions requires the ability to work standing for about 8+ hours a day, 5 – 6 days a week and lift approximately 50 pounds.
    • Schedule and hours vary from Monday – Sunday
